Easy Raw Food Lunch

Need something easy for lunch? Try this raw easy to make “tuna” salad!

This meal is not only satisfying and savory, but has limited ingredients and is fairly easy to make.

I like to put my “tuna” salad over a bed of fresh lettuce. I also sometimes throw a few cranberries, tomatoes, and sprinkle some nutritional yeast on top of my creation. This recipe really only takes about 15 minutes to prepare, just remember you have to soak the nuts for a little while.

Raw “Tuna” Salad

Serves 2


1/4 c raw pumpkin seeds (soaked 10-30 min)

1/4 c raw sunflower seeds (soaked 10-30 min)

1-1/2 tbsp apple cider vinegar

1/2 tsp sea salt

1/2 tsp black pepper

2 tbsp cold pressed (if available) olive oil

1-2 tsp garlic depending on taste

1-2 tsp poultry seasoning (optional)

1/4 c diced red or yellow onion

1/4 c chopped celery

1/4 of red pepper chopped (optional)

Put nuts, apple cider vinegar, oil, salt, pepper, garlic, and poultry seasoning into food processor. Blend or chop until you get a still chunky consistency (it will look somewhat like tuna salad). Remove from food processor and mix in chopped onion, celery, and red pepper

    I'm currently in college, and this is my first year living off campus. I've been trying to cook healthy and creatively while maintaining a reasonable budget. This "raw tuna" salad was easy to make, satisfying, and not overly expensive...a must try! I'd be interested in more blogs about healthy cooking on budget! Thanks!
